I have a 6 hour 55 minute layover in CDG is it possible to see at least some parts of the city and make it back to the airport on time? Any recommendations?

The RER B train from CDG to Paris Gare du Nord is about 45 minutes one-way. (There are no Metro (subway) trains between CDG Airport and Paris.)
I think you'd have about 3 hours to spend in the city given your layover timing.
A Ticket Mobilis 1-5 zone would cover your travels to Paris and back to CDG plus any trips inside Paris on bus, Metro, RER, Tram.
