Yes, at Gare de Lyon train station in Paris you can buy Paris Visite Pass from any ticket vending machine or ticket window in front of entrances to either the RER, Metro or Transilien trains. Paris Visite Pass can be bought/sold from ticket vending machines as its just a multiuse paper ticket, not a plastic card type pass, so it's easily dispensed from all the various automated ticket machines.
Paris Metro and RER trains (and their ticket windows) will be underground, one & two levels below street level inside Gare de Lyon. There will be ticket windows at the entrance to both the Metro and RER sections of Gare de Lyon where you can buy the Paris Visite ticket.
Transilien trains will be at ground/street level and so will their ticket office / ticket machines. Signs around Gare de Lyon will read "Billets Paris et Ile-de-France" for the Transilien ticket window.
For RER tickets, yes, you can buy these ahead of time and use them later / in the future. You can buy all the RER tickets you need at your first visit to a Metro/RER/Transilien ticket window / ticket machine (yes, even Metro ticket windows will sell RER tickets) and use the tickets throughout your stay in Paris.
