I will arrive at CDG on a Thursday night (19:30) and want to travel to the Latin Quarter on the RER (Saint Michelle Notre Dame station). For the following 5 days I will stay within the tourist areas in the center of the city (not Versailles or Disneyland). During these 5 days I plan to use the metro 8-10 times. On the afternoon of the seventh day, I plan to return to CDG on the RER. What ticket or combination of tickets should I purchase?

Because you'll need coverage for 7 days and will stay inside central Paris (besides CDG) I'm going to suggest:
Two single-use RER tickets CDG-Paris (good for either direction) + Navigo Easy /w 10 Ticket t+.
You can't load the RER tickets onto Navigo Easy so you'll need to have as individual paper tickets. You can make this purchase all in one transacton at CDG train station ticket offices/ticket windows.
