I am arriving on the 3rd February around 12:30 at Charles De Gaulle airport and am staying in Paris Gare Saint Lazare. I want to be able to purchase a ticket for a 3 day period that gives me flexibility to visit tourist attractions such as Eiffel Tower, Louvre Museum and Arc de Triomphe as well as give me transport to the airport too. I would like to be back at the airport on the 5th February at around 6:00pm.
What is the best option for this?
Any help would really be appreciated :)

As you're arriving on a Saturday, Paris Visite ticket 3-day 5-zone is your best & only option for a multi-use ticket that covers your desired attractions and CDG Airport
The Paris Visite is valid for travel from the time of first validation in a turnstile / ticket gate (Feb 3rd around noon for you) until the end of the 3rd day (Feb 5th midnight in your case.)
