Can you suggest which ticket would be best for us to purchase for the day?

We arrive at CDG Paris and want to take the train to our hotel to drop our luggage and then we are hoping to head out and see as many of the following places as possible:
Versailles Palace, Eiffel Tower, Arc de Triomphe, Alexander Bridge, Opera House, Sainte Chappelle and Notre Dame Cathedral.
We'd like to utilize as much public transportation as we can but need to do it on a tight budget.  My son is disabled, he has spina bifida and can walk but walking for very long periods of time can be cumbersome for him so taking trains and buses will be a necessity.  We only have one day to tour then we utilize our EuroPass to travel to another country.  It is my understanding that the EuroPass won't work on the metro so we'd have to do something separate.  Thank you for your time!  Many Blessings!

For a single day in Paris I'd recommend a Ticket Mobilis 1-5 zone day ticket, which will cover your travel from CDG Airport to Paris, from Paris to Versailles by train, etc. for the entire day of your arrival, until midnight.
 
The key thing to note is that the day ticket expires at midnight so you need to complete your travels (finish last bus ride or Metro ride & exit station) for the day before midnight.  The next day, for your EuroPass trip, you'll need a new ticket such as Metro ticket t+ or Bus ticket to get to your departing international train.  (You are correct that EuroPass doesn't cover Paris Metro.)
