I will be arriving with RER from CDG airport. Apparently I can use the ticket for the Metro and it is valid until I leave the Metro. Do I have to enter the Metro immediately after entering Gare du Nord with the RER train, or can I spend some hours eating near Gare du Nord and then enter the Metro with my train-ticket?

You have to continue your journey from RER to Paris Metro directly when you arrive at Gare du Nord. You cannot exit the train area of Gare du Nord into the general public area and come back into the Metro area later using the same RER ticket.  You will need a new ticket immediately if you leave the train area.
